それぞれの1週間の献立から使用食品数を6つの基礎食品群に分類した.また, 調理形態を比較した.2.どの施設でも1日の平均使用食品数は, 27から30であって, 各地設問でほとんど差は認められなかった.1日の献立で比較すると, 日本の施設では夕食に, 上海では昼食に最も多くの料理が提供された.日本の施設では1週間ほぼ均等な献立が実施されていたが, 上海の施設では金曜日は品数が少なく, 週末にはかなり多いものであった.3.2群に属する乳製品などの食材は, 日本では毎日使用されていたが, 上海では1週間のうち1回のみの使用であった.4.日本の施設給食の代表的な調理形態は煮物, 焼き物, 和え物で, これらの出現頻度は約70%弱であった.上海の施設給食では炒め物が圧倒的に多く, さらに炒め煮,
