Interaction between OM and ovalbumin (OVA) which have intramolecular disulfide bonds was examined. Furthermore, heat coagulation of OM and/or OVA was tested after treatment with cystein as reductant, due to exchange of disulfide bonds between intramolecule and intermolecule. It was likely that interchanges between sulfhydryl and disulfide groups in OM and OVA were formed at pH4.0,5.0 and 6.0; however, a considerable amount of OM was remained as soluble.
